These oatmeal cranberry bars with nuts are chewy, crunchy, and sweet all at the same time. They are full of healthy things like oats, nuts, and dried cranberries and make a great snack or dessert.
Ingredients:
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup chopped nuts such as almonds or walnuts
- 1/2 cup dried cranberries
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 1/4 cup honey
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions:
Preheat oven to 350F 175C
In a large bowl, mix together oats, flour, nuts, cranberries, and brown sugar
In a separate bowl, whisk together melted butter, honey, egg, vanilla extract, and salt
Pour wet ingredients into dry ingredients and stir until well combined
Press mixture evenly into a greased 8x8 inch baking pan
Bake in preheated oven for 20-25 minutes, or until edges are golden brown
Allow bars to cool completely before cutting into squares
