Ingredients:
- 3 ripe bananas, mashed
- 3 large eggs
- 1/4 cup almond butter
- 1/4 cup coconut flour
- 1/4 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- A pinch of salt
Instructions:
Preheat your oven to 350F 175C
Grease a loaf pan and line it with parchment paper for easy removal
In a large bowl, combine the mashed bananas, eggs, almond butter, and coconut oil
Mix until well combined
Add the honey or maple syrup and vanilla extract to the banana mixture, stirring until smooth
In a separate bowl, whisk together the coconut flour, almond flour, baking soda, cinnamon, and a pinch of salt
Gradually add the dry ingredients to the wet ingredients, stirring until a smooth batter forms
Pour the batter into the prepared loaf pan and spread it evenly
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean
Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely
