Ingredients:
- 1 lb ground beef
- 1/2 cup cooked rice
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup breadcrumbs
- 1 large egg
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 8 cups chicken broth
- 1 can 14 oz diced tomatoes
- 1 cup carrots, sliced
- 1 cup zucchini, diced
- 1/2 cup celery, chopped
- 1/2 cup green beans, cut into 1-inch pieces
- 1/2 cup corn kernels
- 1 teaspoon chili powder
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Cook the rice and put it in a bowl
Add the chopped onion, minced garlic, cilantro, breadcrumbs, egg, cumin, oregano, salt, and pepper
Form the meat into small balls after mixing it well
Start the pressure cooker and choose the "saut" setting
After browning all sides, take the meatballs out and set them aside
